CABERNET d'ANJOU

GRAPE VARIETY :

Cabernet franc and cabernet sauvignon

SOIL :

Sand and alluvium. Some plots located in the Côteaux du Layon appellation area, thus requiring earlier harvesting than other vineyards.

HOW THE VINEYARD IS WORKING :

Pruned well back (4 to 5 buds). De-budding to only leave fruit-bearing branches. Vines trained on wires to keep the foliage upright and well ventilated.

HARVESTING :

Early harvesting will enable to obtain grapes producing a highly fragrant, fresh rosé.

VINIFICATION :

The destalked grapes undergo a short 18 hours maceration. After pressing, alcoholic fermentation at a constant 16°C lasts approximately six weeks before being stopped to balance the wine at 11° and a residual sugar content of 20 grams per litre.

SAMPLING NOTES :

Pale pink robe; this very fragrant, fruity and slightly sweet wine is reminiscent of fruit drops. This easy-to-drink wine is ideal when hosting friends at any time, but also perfect with food in the summertime. Serve at 8-10°C.

PRESERVATION :

Wine to be drunk within the same year, to be able to appreciate all its fragrances.
