GRAPE VARIETY :


Cabernet franc and Cabernet Sauvignon



SOIL :


Sand and alluvium and schist.



HOW THE VINEYARD IS WORKING:


Ploughing enables to firmly root the vine-trunks, and foster the expression of the soil in the grapes.
Pruned down to ten buds. The rows are spaced 1,90 meters apart, with one meter between each plant.
Training on wires is controlled to ensure the best balance between quality and vigour. In summer trimming enables a best maturation of the grapes and an enhancement of the natural colouring constituents.



HARVESTING :


October 12 to 19. Hand picking enabled us to selectively harvest at exactly the right level of maturity



VINIFICATION :


The destalked grapes are macerated for 25 to 30 days depending on the potential of the grapes.
During this period, temperatures kept at level for alcoholic fermentation, in order to extract the grapes colour of fragrance.When the wine is drawn off the vats, it is aged for one year to enhance its appeal.



MATURING :


In underground tanks to avoid variations in temperature (70%), In French oak barrels (30%).



SAMPLING NOTES :


Nicely intense colour, well-rounded, soft tannins, and the finesse of the nose make it a good wine to accompany meat dishes, game and strong cheeses.



PRESERVATION :


Wine can be kept between 5 to 10 years.
